Coconut Adzuki Bean Pudding
Ingredients :
3 1/2 cups water, 125g organic adzuki bean, 350ml organic lite coconut milk
10g agar-agar, 4 tablespoons corn flour, 250g organic cane sugar
Method :
- Bring 2 cups of water to boil
- Add in organic adzuki beans and cook till they soften
- Strain. Save the water
- Soak agar-agar in 1 1/2 cups of water until it is slightly softened
- Add agar-agar together with the water into a saucepan
- Add 1 cup of water ffrom the cooked organic adzuki beans
- Add in organic cane sugar, cook on low heat
- Heat until agar-agar is dissolved
- Mix corn flour with 1/2 cup water and set aside
- Add in organic lite coconut milk, bring to boil
- Add organic adzuki beans, bring to boil
- Remove from heat
- Slowely stir in corn flour mixture, mixing thoroughly
- Pour mixture into a container
- Chill until it is set
