Coconut Adzuki Bean Pudding

Ingredients :

3 1/2 cups water, 125g organic adzuki bean, 350ml organic lite coconut milk

10g agar-agar, 4 tablespoons corn flour, 250g organic cane sugar

Method :

  1. Bring 2 cups of water to boil
  2. Add in organic adzuki beans and cook till they soften
  3. Strain.  Save the water
  4. Soak agar-agar in 1 1/2 cups of water until it is slightly softened
  5. Add agar-agar together with the water into a saucepan
  6. Add 1 cup of water ffrom the cooked organic adzuki beans
  7. Add in organic cane sugar, cook on low heat
  8. Heat until agar-agar is dissolved
  9. Mix corn flour with 1/2 cup water and set aside
  10. Add in organic lite coconut milk, bring to boil
  11. Add organic adzuki beans, bring to boil
  12. Remove from heat
  13. Slowely stir in corn flour mixture, mixing thoroughly
  14. Pour mixture into a container
  15. Chill until it is set
